Jackfruit Mexican Fajitas

Jackfruit really is The Jack of All Trades in terms of meal ideas. It's a fairly tasteless fruit straight out of its shell or can, but dressed up with herbs and spices it becomes its character. During my search for a vegan fajita recipe, I stumbled upon a slew of Jackfruit chow. For the most part this tender, chewy food acts as a meat-replacement in most recipes.
Jackfruit BBQ sandwichs, Jackfruit salads, Jackfruit crab cakes, Jackfruit tacos, Jackfruit "tuna" melts, Jackfruit BLT sliders, Jackfruit bacon, Jackfruit spinach dip and I will end that Forest Gump impression right there (sorry not sorry).
My spin on Jackfruit Mexican Fajitas
In a tuppwear bin put 1 drained and chopped can of Jackfruit.
For the marinade: throw in a swooping, drizzle of Sriracha hot sauce, 1 teaspoon of garlic, 1 teaspoon of paprika, 1 teaspoon of chilli powder and 1 teaspoon of cumin. Let that sit for 2 hours at least (overnight is better) so your Jackfruit can soak it all in at his very own fiesta party.
In a frying pan, on medium heat, toss 1/2 a diced sweet onion and 3 oz of chopped portobello mushroom.
Next, add in your Jackfruit marinade. Let everyone dance around for a bit and add in some Old Epasso Taco Sauce, 3-4 tablespoons.

You are almost done!
Now you just have to add your favourite fajita toppings...
We used vegan cheese, avocado, red pepper, red onion and my "special sauce" for Al's fajita (shown in the first photo) on a whole wheat wrap.
Since I'm on prep I Vito the cheese and sauce and add in some baby spinach and Sweet with Heat mustard (I use this a lot). I also threw on a tablespoon of hemp protein, which is granular but tasteless.

Macros for my meal using 2 wraps and 1 cup (basically half) of the pan:
Cals: 600, Protein: 22g, Carbs: 90g, Fat: 11g and 12g of fibre!
Recipe for "Special Sauce" (which you can dip anything in - great with sweet potato fries): 2 tbsp vegan mayo, 1/2 tbsp sweet with heat mustard & 1 swirl of Sriracha sauce
