A Light Night Salad Bowl

Days don't have enough hours for all of our busy lives. How is it possible to have a non-stop, long day that was too short to get things done? Trying to answer that makes my brain hurt - so I'm going to let it remain one of life's great mysteries. 

It's 7:30pm, baby Jack is in bed sleeping like... a baby 🤔. We had a nice walk and great session at the park with Walker that lasted into dinner time, which pushed bath time up, which led me here, eating dinner at 7:30pm.

SO WORTH IT! 😍

But now it's serious chow time. Being on competition prep means you don't go to bed hungry if you haven't had all your meals. You stay up - you get all your macros in. 

Mission: make a nutrient packed, macro hitting, filling meal - but not too filling, easy on the digestive tract and very delicious. 

A Light Night Salad Bowl

1/2 cup of shredded cabbage

1 cup shredded baby spinach 

50g baked tempeh, chopped

1 radish, chopped 

1/4 avocado

50g Mung Bean spaghetti (I get mine at Bulkbarn)

1/2 tbsp pumpkin seeds

1 serving of Healthy Garlic Sauce **see below

Healthy Garlic Sauce

On low-medium heat, very lightly oil a frying pan (I pour a bit of oil then rub it around with a bit of paper towel - much like you would lightly grease a pie pan).

Add the following ingredients:

1 teaspoon of minced garlic

1/4 cup of unsweetened almond milk

1 tablespoon of Coconut Sauce (I use Organika Coconut Sauce from Bulkbarn)

1/4 teaspoon of dried parsley

1/4 teaspoon of onion powder

Pepper to taste

1 tablespoon of nutritional yeast

Simmer on low heat, stirring often, until desired thickness. Mine is like a Dijon mustard consistency. 

I really enjoyed this salad bowl, mission accomplished! Good night all
