Cold Night Warm Salad: Mushroom Sauce

I love a warm meal and sometimes a cold salad doesn't cut it, especially on those nights you feel Autumn coming to a winters end. Spinach cooking under hot veg is a meal staple in my life - still a healthy salad, but it's savoury

Mushroom Sauce

In a sauce pan, on medium heat, add the following ingredients...

1/3 cup vegetable broth (you can use water)

1/2 cup of almond milk (or non-dairy milk of choice)

1 tsp minced garlic 

1 tsp vegan Worcester sauce

1 tbsp of coconut sauce (Organika brand - or use low sodium soy sauce)

1/2 tsp onion powder

Chopped mushrooms (I used 3 baby portobellos but use what you love)

A drizzle of Sriracha

Chilli flakes

1 tablespoon of pea protein

2 tablespoons of nutritional yeast

Let the ingredients cook to a sizzle, then turn the heat to low and stir until thickened. 

Pour on salad, a rice bowl or just some plain veggies (baked asparagus would be 👌🏻) that need some love on a cold night.
