My Saag-Aloo

One of the most useful pieces of knowledge I have acquired from growing up, watching my dad create culinary masterpieces in the kitchen (often using very little ingredients), always have a jar of curry paste in the house. It seems so simple but you can literally turn a basic box of plain pasta into a spicy, flavourful dish, using a little dab of curry and some onion. Bland dishes become magical, how-did-you-make-this type recipes, in seconds. Follow this advice and you really can't go wrong... unless you don't like curry of course, in which case, skip this recipe altogether. Saag is term used in certain parts of India, very common in regions of Punjab, referring to green-leaved dishes, in our case, spinach. Saag-Aloo is spinach and potato. This recipe is my own spin on the traditional dish which automatically makes it far from authentic. Either way, it sure makes you think "curry" while eating it - spicy and delicious! My Saag-Aloo

You will need... 700g (about 4 medium-large potatoes) peeled potatoes, chopped into 1/2 inch cubes. 1/2 vegetable bouillon cube, crumbled 50 ml vegetable broth (or water) 1 tablespoon of flax oil (or oil of choice) 1/2 teaspoon of cumin 1/2 teaspoon of hot chilli 1/2 teaspoon turmeric 1 teaspoon red curry paste 1 tablespoon mild curry paste 3 large handfuls of chopped spinach Lots of black pepper!
Salt (used after cooking) Pile all ingredients into a crockpot.


The potatoes will take on a bright yellow-orange colour - beware these beautiful, bright curries can stain!


If you can fit more chopped spinach in your crockpot, do it! As we all know, cooked spinach dwindles down to nothing.

Set your pot to medium or high, stirring every hour, for 3 hours - or until potatoes are soft. Salt to taste after cooking.

I serve the dish warm but it can be eaten cold. Use as a side or a main, it pairs well with tofu, lentils or chickpeas. Traditionally one would eat Saag with naan bread, so save that idea for a carb loading day! I served it to my 1 year old, Jack and he devoured it, which was nice because he ate a decent amount of spinach! Enjoy your day and your food!
