Chickpeas & Curry

You will need the following ingredients... 1 tsp coconut oil 1 green onion, chopped 1-2 garlic cloves, minced 1 small red onion, chopped 1 cup chopped red bell pepper 1 cup chopped spinach 1.5 cups cooked chickpeas (if use I go canned use a whole 15oz can) 1/4 teaspoon Chilli flakes Sriracha hot sauce, to taste Salt, to taste, once cooked 2 teaspoons mild curry paste 2 teaspoons red curry paste 1/4 cup coconut milk 1/4 cup vegetable broth In a frying pan on medium heat melt coconut oil. Add onions, garlic, pepper and spinach storing and cooking until onions become soft or transparent looking. Add the chickpeas, cover and simmer over low heat. Next, in a small bowl add coconut milk, vegetable broth and curry paste. Mix them together well, then pour over your cooking veg in the frying pan. Bring up heat to a boil then back down to a simmer, cover and stir occasionally. At this point you can add the chilli flakes and Sriracha sauce. Add salt only once everything has cooked and been plated. **Adding salt to cooking food will not affect taste as much as it will elevate sodium levels. Use as a main or a side, either way I hope you enjoy this delicious and healthy dish as much as I do! Enjoy your day and your food!
