The Happy Rainbow Sandwich

If you are having trouble getting your kids to eat a wide variety of veggies, they might not put up so much fuss if they think they are eating a rainbow! I mean it worked for Skittles, right?

What you will need and what you will need to do...

Using 4 oz of tempeh cut the brick in half, width wise to make a "bread slice". Season each side with some onion powder and parsley flakes. Pan fry in 1/4 teaspoon of coconut oil until both sides are crispy & golden. 

HINT: Alternate cooking method is to bake at 350 for 25 minutes. However, I do find baking tempeh makes it a bit softer than you would want for a sandwich. 

Pink Spread: 1 tablespoon of Hummus (homemade recipe in a separate post) and 1 tablespoon of my Pink Flower Dressing (Recipe in a separate post) 

Green spread: 1/4 cup steamed broccoli, mashed, 1/4 avocado mashed, 1 tbsp nutritional yeast. Mix together and add salt to taste. 

Add one spread to each slice of tempeh then pile your colourful veggies on top! I used baby greens, TASTE microgreens, tomato, yellow pepper & cucumber! 

This was one of the BEST sandwiches I have had in a long time ~ nutritional and satisfying!
