A Day of Eats

I’ve been meaning to do another full day of eating since my competition, but you know how things get busy! To be honest, once I was done with prep, I went completely off the grid. I still ate a variety of plant based foods but added in some treats, went out to a few restaurants and didn’t do any macro counting - a much needed break from the regime.

As of almost three weeks ago, I have started to get back on track with things. Why? Because that’s how I roll. I actually like it. Im always very interested in knowing what’s going on with my food and my body. I also started intermittent fasting, which, I will delve deeper into on a separate post. Long story short, I’m doing a 16/8 split - 16 hours of fasting, 8 hours of eating. It works out to be that I start eating at 11-11:30am and stop at 8 pm. I do it this way so that the majority of my fasting, is done while I’m asleep. #doable

A Day of Eats

I break my fast with toast, sunflower seed butter, half of a banana, a Brazil nut (for thyroid health) and a protein shake. The shake had the other half of the banana, spinach and some ashwaghanda powder.

My next meal is a giant bowl of spinach and veggies which included: beans, tomato, pepper, avocado, peas, broccoli sprouts, sauerkraut and tofu.

**I had an apple for a snack ... but there’s no picture of it because I ate it in the car. 🍎 <~ it looked like this, so perfect.

Next, I had another big bowl! stir fried tempeh, Brussels sprouts, portobellos, onions, kale and green chilllis. I tossed it on some greens, edamame and mung bean noodles and garnished with some hemp hearts, chrunchy radish and radish sprouts by TASTE Micro-greens. <~ Check them out on Instagram.

My last few bites were banana and blackberries on corncakes with sunflower seed butter.

Today’s Macros

Calories: 1858

Protein: 131g

Carbohydrates: 225g

Fat: 56g

Fibre: 67g

I hope this helps give you an idea of what your plantbased day could look like! There is room for more calories here - I typically hit around 2000 calories daily but I was on the road a lot!
