Crispy Protein Roll Up’s

Somewhere between a burrito & manicotti ~ but really it was about the fact that I didn't know what to do with 3 leftover green lentils lasagne noodles.... Put stuff inside?

The part of this idea that required the most thought was deciding what I should use to tie them up. It was between long carrot stems, celery strips and fresh chives ~ chive on baby!

Crispy Protein Roll Up’s
Pre heat your oven to 350 degrees.
In a pot, bring 5 cups of water to a boil then add 9 lasagne noodles ~ I prefer the Explore Cuisine Organic Green Lentil Lasagne because of the high protein content. Boil noodles until soft.
In a skillet add the following ingredients:
1/2 cup of veggie broth
1/2 of a green chilli - diced
1 garlic clove - minced
1 green onion - chopped
1/4 teaspoon cilli flakes
1/4 teaspoon parsley flakes
1/2 teaspoon cumin
1/2 teaspoon paprika

Bring to a boil, then simmer for about 3 minutes.
Next, add:
1 brick of tofu - crumbled
1 cup of cooked black beans - mashed
2 tablespoons of nutritional yeast

Let this cook for two minutes, then add another 1/4 cup of veggie broth and 1 cup of finely chopped spinach. Cook until spinach has done what spinach does best ~ withered down to nada. Now, add salt to taste and move the skillet to the side to cool a bit before stuffing your noodles.
Get your noodles ready by laying them out on a flat surface. Place 3 fresh chives behind each noodle as shown in the picture below. Add your tofu and bean mixture then sprinkle some vegan cheese on top ~ this helps hold everything in. Don't worry about anything falling out the ends!


With some effort tie your chives into a knot, holding the noodle together as a roll. I tied the middle chive first as a mount, then the ends. If your middle tie is too loose, simply cut it with scissors and re-tie with a new chive once the ends are tied up securely.


Place on a non-stick pan and bake for 15 minutes.
Pair with some greens and add sauce of choice! I drizzled my rolls with some poppyseed dressing ~ yum!
