Stuffed Tofu

I am of the firm belief that anything non-vegan, you can make vegan, just as delicious, if not more so and absolutely healthier and more nutritious! I was thinking of family dinners when, for some reason, turkey dinner popped into my head ~ cringing on flashbacks. So, lets stuff tofu! Same idea, minus the fact that no one has to die for the meal and no one has to shove a hand up anyones tuccus! Win, win!

Preheat your oven to 350 degrees and ready a non-stick baking pan. You will need... 1 brick of extra firm tofu. Use a good quality brand such as Soyarie ~ you will be manhandling the tofu brick and you want it to holdfast! Cut the middle of the tofu brick out, as demonstrated in the pictures below. I used a very long, narrow knife and sliced straight down on all four sides.


I flipped it onto the opposite side and repeated the same cuts. I used a small metal teaspoon to remove middle ~ don’t waste, makes for some great tofu scramble!
Once my brick was cut and cleaned out I applied the rub. Rub ingredients... 1 teaspoon paprika 1 teaspoon turmeric 1/4 teaspoon ground pepper Next step is to make the stuffing!
Stuffing ingredients... 3/4 cup cooked quinoa ~ or grain of choice. 1/4 cup red cabbage 1/2 avocado 1/4 red pepper 1/4 large portobello mushroom 1 garlic clove 1 tablespoon nutritional yeast 1/8 tsp onion powder 1/8 tsp chilli flakes 2 tablespoons of vegan mozzarella cheese (optional) Mix all stuffing ingredients in a blender ~ not until smooth, just mixed well. Pour into a bowl and fold in the cheese if you choose to use it. Turn your brick of tofu so that one opening is down on a plate and the other opening faces you.

Start stuffing! Press the stuffing down into the brick with your fingers, flip it over and repeats this on the other side.

Bake for 40 minutes.

If the stuffing is popping out when you remove it from the oven, use the backs of two spoons on either side and press toward the middle.

Cool on the pan for about 15-20 minutes before serving. Salt to taste.

With a crispy outer layer and a smooth, savoury inside, this one is sure to kick those turkey stuffers to the curb! ~Liked by 1 billion turkeys.
